Zucchini-Carrot Stir Fry
Ingredients:
3 medium carrots
3 medium zucchinis
1 Tbs. vegetable oil
1 small onion
2 Tbs. Burleson's Pure Honey
1 1/2 tsp lemon juice
1/2 tsp. fresh lemon peel, grated (optional)
Salt and pepper to taste
Directions:
Finely slice carrots, zucchinis and onion. Stir fry in hot oil in skillet until vegetables are crisp-tender. Stir in remaining ingredients and cook an additional minute to meld flavors. Makes 4 servings.
