Vanilla-Honey Gelato
Ingredients:
Dust off your ice cream machine for this wonderful treat.
9 egg yolks
1/2 c. Burleson's Pure Honey
Pinch of Kosher salt
2 1/4 c. milk
3/4 c. heavy cream
1 vanilla bean, split lengthwise
2 Tbs. sugar
Directions:
In a small bowl, whisk together honey, egg yolks and salt. Combine milk and cream in a medium saucepan. Add vanilla bean and sugar and bring to a boil over medium heat. When the mixture comes to a rolling boil, whisk some of the hot milk into the egg yolks, then turn all of the egg yolk mixture into the hot milk, whisking well to combine. Remove from heat and strain, keeping the vanilla bean for another use. Completely chill the custard before freezing it in an ice cream maker, according to manufacturer's instructions. Makes 2 pints.
