Tofu Sunrise
Ingredients:
9 oz. firm tofu, cubed
1 c. strawberries, sliced
4 Tbs. sunflower or pumpkin seeds, hulled
3 Tbs. Burleson's Pure Honey
Juice of 2 oranges
Juice of 1 lemon
Directions:
Reserve 1 Tbs. of seeds and a few pieces of strawberries for garnish. Place remaining ingredients in a food processor or blender and process until smooth, scraping mixture down from sides of bowl as necessary. Pour into two small bowls or tumblers and top with seeds and berry slices. Per serving: 259 calories; 13.3g protein; 30.4g carbohydrate; 28.2g fat; 0 cholesterol;671mg calcium; 1.8g fiber; 19mg sodium.
