Pepper-Honey Pork
Ingredients:
2 1/2 lbs. boneless pork loin roast
1/4 c. Burleson's Dark Honey
2 Tbs. Dijon mustard
2 Tbs. peppercorns, crushed
1/2 tsp. thyme, crushed
1/2 tsp. salt
Directions:
Cut 1/2-inch slits all around the roast. Combine remaining ingredients and mix well. Coat the roast with 2/3 of the honey mixture and place meat on a rack in a roasting pan. Roast at 300 degrees Farenheight. for 1 hour, then brush with remaining honey mixture and cook about 45 minutes more or until thermometer inserted into thickest part registers 170 degrees Farenheight. Allow meat to rest for 10 minutes before slicing. Make 6 servings.
