Latin Beet Salad
Description:
Give beets a new rhythm
Ingredients:
6 whole beets, freshly cooked or canned
1 tsp. Burleson's Pure Honey
2 Tbs. balsamic vinegar
Juice of 1/2 lemon
2 Tbs. olive oil
1 c. fresh cilantro leaves, chopped
1 tsp. cayenne pepper (more or less to taste)
Directions:
Cut beets into small cubes. Add honey, vinegar, lemon juice, olive oil, cayenne, a pinch of salt and half of the cilantro leaves. Toss well and refrigerate for 1 hour if possible. Garnish with remaining cilantro leaves prior to serving. Makes 4 servings. Per serving: 90 calories; 1.9g protein; 7.8g carbohydrate; 5.9g fat; 0 cholesterol; 45mg calcium; 1.2g fiber; 69mg sodium.
