Honey Mousse

Description:
An elegant finish to any meal - and easy to make!

Servings:

Ingredients:

3 egg yolks
1 Tbs. sugar
1/2 c. Burleson's Pure Honey
1/2 envelope plain gelatin
1 c. heavy cream
1 c. mascarpone cheese

Directions:
Using the whip attachment on an electric mixer, beat together the egg yolks and sugar until the mixture is thick and pale in color. Bring the honey to a boil in a small saucepan. Remove from heat and sprinkle top with gelatin, then stir to dissolve. With the mixer on low, slowly drizzle the honey mixture into the egg yolks. When all the honey is added, turn the mixer speed to medium and continue beating until the bowl is cool to the touch. Set aside. In another bowl, beat the cream and mascarpone together to form stiff peaks. Fold the cooled honey mixture into the cream. Cover and chill mousse at least 4 hours before serving. Makes 6-8 generous servings.
