Happy New Year Honey Cake
Description:
Traditionally eaten on Rosh Hashanah, the Jewish new year, to wish all who enjoy it a sweet year ahead.
Ingredients:
3/4 c. Burleson's Pure Honey
2 eggs
1/2 c. vegetable oil
1 c. strong coffee
1 jigger scotch whisky
2 1/2 c. all purpose flour
1 tsp. baking powder
1 Tbs. baking soda
1 Tbs. cinnamon
1/4 c. chopped pecans
Directions:
Combine flour, baking powder, soda and cinnamon in a bowl and set aside. In another large bowl or standing mixer bowl, lightly beat eggs, then stir in oil, coffee, scotch and honey. Mix well. Slowly mix in flour mixture. When mixed, beat on high speed for 5 minutes. Fold in pecans. Pour into oiled tube pan and bake in preheated 350 degrees Fahrenheit oven for 40 minutes or until a tester comes out clean.
