Easy Pickled Beets
Ingredients:
4 c. Burleson's Pure Honey
2 c. beet juice from canned beets
2 c. apple cider vinegar
1 tsp. ground cloves
1 tsp. ground allspice
1 Tbs. ground cinnamon
1/2 c. lemon juice
16 c. fresh or canned beets, sliced
Directions:
Bring all ingredients except beets to a boil in a very large soup pot. Add beets and simmer 15 minutes. Allow to cool, then place in covered jars. Refrigerate at least 3 days before using. Keeps 2 to 3 months in refrigerator.
