Easy Honey-Banana Muffins

Serving suggestion: Serve with butter and Burleson's Pure Honey.
Ingredients:
3/4 c. mashed ripe bananas (about 2 to 3 bananas)
1/2 c. plain yogurt
1 egg, beaten
3 Tbs. Burleson's Pure Honey
2 Tbs. melted butter or canola oil
1 tsp. vanilla extract
1 1/2 c. self-rising flour
1/4 tsp. baking soda
Directions:
Preheat oven to 350 degrees F. In medium bowl, whisk together bananas, yogurt, egg, honey, butter and vanilla. In another bowl, whisk together flour and baking soda; add to banana mixture. Gently fold together ingredients (do not over stir). Spoon batter into 12-c. muffin tin that has been coated with cooking spray. Bake for 25 to 30 minutes or until toothpick inserted in the middle comes out clean. Makes 1 dozen muffins.
