Easy Apricot Bars




1 c. dried apricots, finely chopped
3 Tbs. peanut or cashew butter
3 Tbs. Burleson's Pure Honey
2/3 c. quick-cook oats
1 c. wheat germ

Combine all ingredients in a large bowl, using your hands to combine thoroughly. Coat 8-inch square baking pan with non-stick spray and press the mixture firmly into the pan. Cover and refrigerate for 2 days before serving. Cut into 24 small bars. Makes 24 servings.
