Curried Chicken Salad
Ingredients:
2 whole chicken breasts, cooked and diced
2 celery stalks, diced into small pieces
2 Tbs. fresh cilantro leaves, minced
2 green onions, minced
3/4 c. mayonnaise (or more to taste)
2 Tbs. lemon juice
6 Tbs. raisins
2 tsp. curry powder
1 Tbs. Burleson's Pure Honey
Salt and pepper to taste
Directions:
Mix all ingredients in a large bowl. Cover and chill to combine flavors, up to 24 hours. Makes 6 servings.
