Autumn Orzo
Description:
A colorful side dish for a colorful season
Ingredients:
1/2 lb. fresh butternut squash or pumpkin, seeded and peeled
2 Tbs. olive oil
2 Tbs. Burleson's Pure Honey
2 Tbs. balsamic vinegar
1 c. orzo pasta
1 c. chicken stock or broth
Salt and pepper to taste
Directions:
Place squash on large sheet of foil and drizzle with oil. Seal foil well and roast at 350 degrees Farenheight. for 30 - 45 minutes or until squash is very soft. Allow to cool for 5 minutes. Puree squash in food processor with honey, vinegar, salt and pepper. Bring 3 quarts of water to a boil and add 2 Tbs. of salt. Cook orzo in water for 3 minutes, then drain well. Bring chicken stock to a boil in a large skillet or sauté pan. Add orzo and squash puree, stirring constantly until liquids are absorbed by the orzo. Season with salt and pepper. Makes 4-6 servings.
