Aussie Chicken
Ingredients:
4 boneless, skinless chicken breast halves
1/4 c. Burleson's Pure Honey
1 c. mayonnaise
1 Tbs. soy sauce
1 Tbs. sesame oil
1 Tbs. vinegar
1 tsp. crushed red pepper flakes
1 c. thinly sliced carrots
1 c. broccoli florets
1 c. sliced mushrooms
8 red pepper slices
Directions:
Combine mayonnaise, honey, soy sauce, sesame oil, vinegar and pepper flakes; mix well and set aside. Combine vegetables; set aside. Cut 4 sheets of aluminum foil into 14-inch squares. Create individual packets by spooning 2 Tbs. of mayonnaise mixture onto one side of foil, then top it with 1/4 of the vegetable mixture, another 2 Tbs. of mayonnaise mixture, then a chicken breast then another Tbs. of mayonnaise mixture and finally 2 slices of red pepper. Fold and seal the aluminum foil packet. Place packets on a baking sheet and bake at 350 degrees fahrenheit for 30 minutes, checking to be sure juices run clear and chicken is no longer pink in center before removing from oven. To Microwave: Use parchment or wax paper instead of foil for packets. Place packets on microwave-safe tray or plate with thickest edges to outside. Microwave at High (100%) for 15-20 minutes or until chicken is thoroughly cooked. Makes 4 servings. Serving suggestion: Serve in the packet, with rice or noodles.
